Simple roasted potatoes in oven
Ingredient

2 pound

Olive oil
|
2 tablespoon

Garlic powder

1 teaspoon

oregano
|
1 teaspoon

salt
|
½ teaspoon
|
Red chilli
|
½ teaspoon
|
pepper
|
¼ teaspoon
|
Cottage cheese
|
2 tablespoon
|
cumin
|
2 pinch
|
Chopped fresh
coriander
|
½ tablespoon
|
Topping ingredients:
·
sour cream (or even Greek yogurt for a healthy twist)
·
onions
·
bacon bits
·
cheddar cheese or parmesan cheese
Instructions
1.
Preheat oven to 420°F.
2.
Scrub potatoes
3.
Dice into cubes.
4.
If time allows, soak potatoes in cold water for up to 1 hour.
(This removes starch from potatoes and makes potatoes fluffy). Drain and dry
the soaked potatoes, if necessary.
5.
Mix potatoes with seasoning, herbs and with olive oil.
6.
Place on a baking tray and bake for 30-40 minutes until browned
and tender.
