Classification of food on the basis of PH value
There are four classes of foods on the basis of PH value.
1. High acidic foods
2. Acidic foods
3. Medium acidic foods
4. Low acidic foods

High acidic foods
High acidic foods have a PH value ranging from 2.5 to 3.7. These include lemons, pickles, pomegranate, and grapes. These are mostly resistant to bacteria and some type of molds.
                                             
Acidic foods
Acidic foods are those that have a PH value ranging from 3.8 to 4.5. These include mango, guava, grapes, oranges, and some fruits like apple, pears, pepper. These foods can be deteriorated by bacteria and molds.
                                             
Medium acidic foods
 Medium acidic foods have PH value 4.75 to 5.02. These include banana, cottage cheese and corn.
                                            
Low acidic foods
Low acidic foods have a pH value ranging from 5.0 and above it. These include meat and meat products, fish, milk and milk products such as cheese, butter, egg white, pulses, legumes, nuts, cocumber etc. Spoilage of low acidic foods can be occurred by most spore forming molds and bacteria. These deteriorate the quality of foods and affect its market value.
